If you level the trader profession you will, at some point, unlock a weapons locker in your camp that you can buy (cant remember the price but its somewhere between 400-800 dollars). From there you can unequip, and re-equip weapons as you please, removing them from your horse/wheel.

IIRC all guns are golden and you cant switch it off you have to uninstall them.
